Air-drying is a slow, low-temperature process, and it's the low temperature that does all the work. Here's what actually happens:

• The low, slow heat draws moisture out of the meat and other ingredients at 68°C, gently, without ever cooking them.
• Kibble, by comparison, is extruded at 160°C to 200°C to puff and shape into the familiar biscuit.
• At that lower temperature, the nutrients and enzymes stay intact. Kibble loses them to heat and adds them back synthetically to compensate.
• The low heat concentrates flavour instead of cooking it away, which is part of why fussy dogs go for it.
• The finished product is shelf-stable. No fridge or freezer needed. Unopened it stays fresh for 12 months. Once opened, use it within 8 to 12 weeks.

None of these formats is simply right or wrong. They trade off differently between processing, digestibility and effort, and it helps to see them side by side.
